Brownies

I made 2 types of brownies but only managed to take pictures of one of them. Whoops.

One was a mix for Cocnut Macaroon Brownies and the other was just a recipe from the cookie cookbook. I think they were “on the fence” brownies, meaning they were between cakey and fudgey.

I also used the Baker’s Edge pan.

Didn’t manage to get a picture of the macaroon one. I didn’t really like them too much…the sweetness of the brownies and the coconut seemed to be slightly off from each other…but still a bit tasty.

Raspberry Linzer Cookies

Time for another batch of updates.

I’d bought a Valentine Linzer cutter set a while ago and it came with a Vanilla Sugar cookie mix and raspberry jam.

The cookies turned out a bit too crisp, but I put them in a container and in the fridge overnight and they softened up quite nicely.

Chocolate Indulgence Cake

As part of the King Arthur Flour Mix ‘n’ Magic Baking Club this month, I got a mix for Chocolate Indulgence Cake. With a name like that, who can resist? :D

I messed up a little bit when making it. It calls for an 8″ cake pan and I used a 9″ one, so it was slightly overcooked. I think it will be just fine, though. I had a heck of a time getting it out of the pan, though. It said to let it cool for 2 hours and then let the pan rest in hot water for a few minutes. I not only did that but I also had to poke at it with a tiny spatula to get it to release enough to come out of the pan and onto the plate! I was almost ready to just take the whole pan in.

In any case, I haven’t taken it to work yet to share with the co-workers. I might pre-cut it into tiny squares since it looks quite decadent. Mmmm…

Maple Oat Scones

I got the King Arthur Flour mix for Maple Oat Scones a while ago and I finally got around to making them. Since the oats are part of the mix, I’m pretty sure the ones in the picture on the box were put on afterward. ;) In any case, they turned out pretty well and were darn tasty and not overly dry, which scones can be if you’re not careful.

Double Dutch Chocolate Muffins

I made some Double Dutch Chocolate muffins via a King Arthur Flour mix yesterday. I think this is the link, but the picture is deceiving since it doesn’t come with a glaze package. In any case, since I bring these things in to work to share, I made mini-muffins. The mix says it makes 12 regular sized muffins. It makes about 48 mini-muffins. They’re pretty tasty!
